  • 1 quart vanilla ice cream
  • Gel food coloring (purple, blue, pink)

For the Decoration:

  • Whipped cream
  • Rainbow sprinkles
  • Edible glitter
  • Unicorn horn and ears decorations

Instructions

  • Prepare the cake mix according to package instructions.
  • Divide the cake batter into three equal parts.
  • Add a different color of gel food coloring to each part (purple, blue, pink) and mix until well combined.
  • Bake the cakes according to package instructions in round cake pans.
  • Once baked, let the cakes cool completely.
  • While the cakes cool, soften the vanilla ice cream and divide it into three equal parts.
  • Add a different color of gel food coloring to each part (purple, blue, pink) and mix until well combined.
  • Line a round cake pan with plastic wrap. Layer the colored ice cream and freeze until solid.
  • Stack the cooled cakes with layers of colored ice cream in between.
  • Frost the outside of the cake with whipped cream.
  • Decorate with rainbow sprinkles, edible glitter, and unicorn horn and ears decorations.
