- Prepare Cake Batter:
- Prepare cake batter according to package instructions, adding rainbow sprinkles to the batter before dividing it evenly between the pans.
- Bake Cakes:
- Bake cakes according to package instructions. Let cool completely on wire racks.
- Prepare Ice Cream Layers:
- Once cakes are cooled, line the same cake pans with plastic wrap, allowing for overhang.
- Soften vanilla ice cream until spreadable. Divide ice cream into three portions and color each with pink, blue, and purple food coloring, mixing until the desired color is achieved.
- Freeze Ice Cream Layers:
- Spread one color of ice cream into each prepared cake pan, smoothing the top. Cover with plastic wrap and freeze until firm, about 2 hours or overnight.
- Assemble the Cake:
- Place one layer of cake on a serving plate. Remove one layer of ice cream from the pan and peel off the plastic wrap. Place on top of the cake layer.
- Top with the second layer of cake, then carefully peel off the plastic wrap from the remaining layer of ice cream and place it on top of the cake.
- Final Freeze:
- Freeze the assembled cake for at least 4 hours or overnight to set.
- Decorate:
