These Valentine’s Cake Mix Truffles are a perfect no-bake treat for the season of love! A soft, cake-like center coated in smooth Candy Melts and topped with a touch of pink food coloring. Ideal for a sweet gift or a festive dessert.


Ingredients

  • 1 box of cake mix (any flavor, though red velvet or vanilla work well for Valentine’s)
  • 3 eggs
  • 1/3 cup oil
  • 1 cup water
  • 8 oz cream cheese, softened
  • Candy Melts (pink or white)
  • Pink gel food coloring

Instructions

  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • In a mixing bowl, combine the cake mix, eggs, oil, and water. Stir until smooth.
  • Pour the batter onto the prepared baking sheet and spread it out evenly.
  • Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  • Let the cake cool completely.
  • Once cooled, crumble the cake into small pieces in a large mixing bowl.
  • In a separate bowl, beat the cream cheese until smooth. Add it to the cake crumbs and mix until fully combined, creating a dough-like texture.
  • Roll the mixture into 1-inch balls and place them on a parchment-lined tray. Chill for about 30 minutes in the fridge.
  • While the truffles chill, melt the Candy Melts according to the package instructions.
  • Add a few drops of pink gel food coloring to the melted Candy Melts, stirring to combine.
  • Dip each chilled truffle into the melted Candy Melts, covering it completely.
  • Place the dipped truffles back on the tray to set. Allow them to cool and harden before serving.

Notes

  • You can decorate the truffles with sprinkles or additional colored Candy Melts if desired.
  • If you don’t have pink gel food coloring, you can use red or white for a different look.
