  • 4 eggs
  • 3/4 cup sugar
  • 1/4 cup water
  • 1 teaspoon vanilla extract
  • 3/4 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • Confectioners’ sugar (for dusting)
  • 1 cup whipped cream
  • Assorted Christmas sprinkles

Instructions

  • Preheat oven to 375°F. Line a 15x10x1-inch baking pan with parchment paper.
  • In a large bowl, beat eggs on high speed for 5 minutes or until thick and lemon-colored. Gradually beat in sugar. Stir in water and vanilla.
  • In a separate bowl, whisk together flour, baking powder, and salt. Gradually add to egg mixture, beating just until smooth.
  • Spread batter evenly into prepared pan. Bake for 10-12 minutes or until cake springs back when lightly touched.
  • Immediately turn cake onto a kitchen towel dusted with confectioners’ sugar. Gently peel off parchment paper. Roll up cake in the towel jelly-roll style, starting with a short side. Cool completely on a wire rack.
  • Unroll cake. Spread with whipped cream; roll up again. Place seam side down on a serving platter. Dust with confectioners’ sugar and decorate with Christmas sprinkles.

Notes

  • Make sure the cake is completely cooled before unrolling to prevent it from cracking.
  • Use fresh whipped cream for the best texture, or store-bought if you’re in a hurry.
