Description
These vegetarian sausage rolls are packed with savory miso-mushroom filling, wrapped in flaky puff pastry. The umami flavors from miso and soy sauce combined with the earthy mushrooms create a delightful vegetarian alternative to traditional sausage rolls.

- 1 tbsp olive oil
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 200g mushrooms, finely chopped
- 2 tbsp miso paste
- 1 tsp soy sauce
- 1 tsp dried thyme
- 1/2 cup breadcrumbs
- 1 pack puff pastry
- 1 egg, beaten
Instructions
- Preheat the oven to 200°C (400°F) and line a baking tray with parchment paper.
- Heat the olive oil in a pan over medium heat and sauté the onion and garlic until softened.
- Add the chopped mushrooms and cook until they release their liquid and start to brown.
- Stir in the miso paste, soy sauce, thyme, and breadcrumbs. Cook for another 2-3 minutes to combine.
- Roll out the puff pastry on a lightly floured surface and cut into rectangles.
- Spoon the mushroom mixture onto each pastry rectangle and roll up to enclose the filling.
- Brush the top of each roll with the beaten egg to help them brown.
- Place the rolls on the prepared baking tray and bake for 20-25 minutes, or until golden brown and crispy.
- Serve hot and enjoy!
Notes
- Serve these sausage rolls with a side of salad or dipping sauce for extra flavor.
- These rolls can be frozen before baking and baked from frozen when ready to serve.
