Description

This Walking Taco Casserole is a hearty, cheesy, and flavorful dish that takes the classic walking taco and turns it into a delicious baked casserole. Layered with ground beef, beans, corn, and plenty of melted cheese, it’s a fun and easy meal perfect for weeknight dinners or feeding a crowd.


Ingredients

  • 1 lb ground beef
  • 1 small onion, chopped
  • 1 packet taco seasoning
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes
  • 1 bag corn chips
  • 2 cups shredded cheddar cheese
  • Optional toppings: sour cream, salsa, avocado, lettuce

Instructions

  • Preheat oven to 350°F (175°C).
  • In a large skillet, cook ground beef and onion until beef is browned. Drain excess fat.
  • Stir in taco seasoning, black beans, corn, and diced tomatoes. Simmer for 5 minutes.
  • Layer half of the corn chips in a greased 9×13 inch baking dish. Top with half of the beef mixture and half of the cheese. Repeat layers.
  • Bake in preheated oven for 20-25 minutes, or until cheese is melted and bubbly.
  • Serve with optional toppings as desired.

Notes

  • For a spicier casserole, add some diced jalapeños to the beef mixture or top with hot salsa.
  • You can substitute ground turkey or chicken for a leaner version of the casserole.
  • Feel free to switch up the cheese, using a combination of cheddar and Monterey Jack for extra flavor.
