This Walking Taco Casserole is a hearty, cheesy, and flavorful dish that takes the classic walking taco and turns it into a delicious baked casserole. Layered with ground beef, beans, corn, and plenty of melted cheese, it’s a fun and easy meal perfect for weeknight dinners or feeding a crowd.

- 1 lb ground beef
- 1 small onion, chopped
- 1 packet taco seasoning
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1 can diced tomatoes
- 1 bag corn chips
- 2 cups shredded cheddar cheese
- Optional toppings: sour cream, salsa, avocado, lettuce
Instructions
- Preheat oven to 350°F (175°C).
- In a large skillet, cook ground beef and onion until beef is browned. Drain excess fat.
- Stir in taco seasoning, black beans, corn, and diced tomatoes. Simmer for 5 minutes.
- Layer half of the corn chips in a greased 9×13 inch baking dish. Top with half of the beef mixture and half of the cheese. Repeat layers.
- Bake in preheated oven for 20-25 minutes, or until cheese is melted and bubbly.
- Serve with optional toppings as desired.
Notes
- For a spicier casserole, add some diced jalapeños to the beef mixture or top with hot salsa.
- You can substitute ground turkey or chicken for a leaner version of the casserole.
- Feel free to switch up the cheese, using a combination of cheddar and Monterey Jack for extra flavor.
