- 1 pound boneless, skinless chicken breasts, diced

- 4 cups chicken broth
- 1 can diced tomatoes

- 8 lasagna noodles, broken into pieces
- 2 cups spinach
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese

Instructions
- In a large pot, heat olive oil over medium heat. Add diced chicken and cook until browned.
- Add chopped onion and minced garlic. Cook until softened.
- Stir in chicken broth, diced tomatoes, and Italian seasoning. Bring to a boil.
- Add broken lasagna noodles and simmer until noodles are tender (about 10-12 minutes).
- Stir in spinach and cook until wilted.
- Add mozzarella and Parmesan cheese, stirring until melted.
