  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 can diced tomatoes
  • 1 teaspoon Italian seasoning
  • 8 lasagna noodles, broken into pieces
  • 2 cups spinach
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper, to taste

Instructions

  • In a large pot, heat olive oil over medium heat. Add diced chicken and cook until browned.
  • Add chopped onion and minced garlic. Cook until softened.
  • Stir in chicken broth, diced tomatoes, and Italian seasoning. Bring to a boil.
  • Add broken lasagna noodles and simmer until noodles are tender (about 10-12 minutes).
