This savory and hearty Witch’s Brew Soup is the perfect potion for a cozy Halloween dinner! Packed with lentils, vegetables, and aromatic spices, this warming soup is a great way to enjoy a nutritious, flavorful meal with a spooky twist. It’s quick to make and perfect for a chilly fall evening!


Ingredients

  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, chopped
  • 1 can diced tomatoes
  • 4 cups vegetable broth
  • 1 cup lentils
  • 1 tsp dried thyme
  • 1 tsp paprika
  • Salt and pepper to taste

Instructions

  • In a large pot, sauté the chopped onion and minced garlic over medium heat until fragrant, about 2-3 minutes.
  • Add in the diced carrots and chopped celery. Cook, stirring occasionally, for another 3-4 minutes, until the vegetables are slightly softened.
  • Stir in the diced tomatoes, vegetable broth, lentils, dried thyme, paprika, salt, and pepper.
  • Bring the soup to a boil, then reduce the heat to low and let it simmer uncovered for 20-25 minutes, or until the lentils are tender.
  • Once the soup is ready, taste and adjust seasoning if necessary. Serve hot and enjoy your delicious Witch’s Brew Soup!

Notes

  • You can add a handful of spinach or kale at the end of cooking for extra greens.
  • For a richer flavor, try adding a splash of apple cider vinegar or a squeeze of lemon juice just before serving.
