- 1 onion, chopped
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, chopped
- 1 can diced tomatoes
- 4 cups vegetable broth
- 1 cup lentils
- 1 tsp dried thyme
- 1 tsp paprika
- Salt and pepper to taste
Instructions
- In a large pot, sauté the chopped onion and minced garlic over medium heat until fragrant, about 2-3 minutes.
- Add in the diced carrots and chopped celery. Cook, stirring occasionally, for another 3-4 minutes, until the vegetables are slightly softened.
- Stir in the diced tomatoes, vegetable broth, lentils, dried thyme, paprika, salt, and pepper.
- Bring the soup to a boil, then reduce the heat to low and let it simmer uncovered for 20-25 minutes, or until the lentils are tender.
