For the Cake:
- 2 1/2 cups cake flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup unsalted butter, softened
- 1 1/2 cups granulated sugar
- 4 large eggs, separated
- 1 teaspoon vanilla extract
- 1 cup buttermilk
- Yellow food coloring
For the Cream Cheese Frosting:
- 1/2 cup unsalted butter, softened
- 8 oz cream cheese, softened
- 4 cups powdered sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 350°F (175°C). Grease and flour three 8-inch round cake pans.
- In a medium bowl, whisk together cake flour, baking powder, baking soda, and salt.
- In a large bowl, beat softened butter and granulated sugar until light and fluffy.
- Add egg yolks one at a time, beating well after each addition. Stir in vanilla extract.
- Gradually add flour mixture to the butter mixture alternately with buttermilk, beginning and ending with flour mixture.
- Beat egg whites in a separate bowl until stiff peaks form. Gently fold beaten egg whites into batter.
- Add yellow food coloring until desired shade is reached, mixing evenly.
- Divide batter evenly among prepared cake pans and smooth the tops.
- Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
- Cool cakes in pans for 10 minutes, then remove from pans and cool completely on wire racks.
- For the cream cheese frosting, beat softened butter and cream cheese until creamy. Gradually add powdered sugar and vanilla extract, beating until smooth and fluffy.
- To assemble, place one cake layer on a serving plate. Spread a layer of cream cheese frosting over the cake. Repeat with the remaining layers.
- Frost the top and sides of the cake with the remaining cream cheese frosting.
- Decorate as desired and enjoy!
