Delight in this moist and fluffy yellow velvet cake, layered with rich cream cheese frosting—a perfect treat for any celebration.

For the Cake:

  • 2 1/2 cups cake flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 4 large eggs, separated
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk
  • Yellow food coloring

For the Cream Cheese Frosting:

  • 1/2 cup unsalted butter, softened
  • 8 oz cream cheese, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  • Preheat oven to 350°F (175°C). Grease and flour three 8-inch round cake pans.
  • In a medium bowl, whisk together cake flour, baking powder, baking soda, and salt.
  • In a large bowl, beat softened butter and granulated sugar until light and fluffy.
  • Add egg yolks one at a time, beating well after each addition. Stir in vanilla extract.
  • Gradually add flour mixture to the butter mixture alternately with buttermilk, beginning and ending with flour mixture.
  • Beat egg whites in a separate bowl until stiff peaks form. Gently fold beaten egg whites into batter.
  • Add yellow food coloring until desired shade is reached, mixing evenly.
  • Divide batter evenly among prepared cake pans and smooth the tops.
  • Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  • Cool cakes in pans for 10 minutes, then remove from pans and cool completely on wire racks.
  • For the cream cheese frosting, beat softened butter and cream cheese until creamy. Gradually add powdered sugar and vanilla extract, beating until smooth and fluffy.
  • To assemble, place one cake layer on a serving plate. Spread a layer of cream cheese frosting over the cake. Repeat with the remaining layers.
  • Frost the top and sides of the cake with the remaining cream cheese frosting.
  • Decorate as desired and enjoy!

Notes

For extra flavor, consider adding lemon zest to the frosting.
