Description

Zapekanka is a classic Ukrainian cheesecake made with cottage cheese, sugar, eggs, and a touch of vanilla. This soft, slightly sweet dessert has a creamy texture and a golden-brown top.   • 2 cups cottage cheese
  • 1 cup sugar
  • 4 eggs
  • 1/2 cup flour
  • 1/2 tsp baking soda
  • 1/2 cup raisins
  • 1/2 cup sour cream
  • 1 tsp vanilla extract

Instructions

  • Preheat the oven to 350°F (175°C) and grease a baking dish (9-inch square or round works well).
  • In a large bowl, mix together the cottage cheese and sugar until smooth.
  • Add the eggs, one at a time, mixing well after each addition.
  • Stir in the flour and baking soda until fully combined, making sure the batter is smooth.
  • Gently fold in the raisins, sour cream, and vanilla extract until evenly distributed.
  • Pour the mixture into the prepared baking dish, spreading it out evenly.
  • Bake for 45-50 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
  • Let the Zapekanka cool completely before serving to allow it to set and firm up.
