Description

These no-bake lemon oatmeal bites are the perfect sweet and zesty snack. With a rich buttery taste and a hint of citrus from the lemon pudding, these bites are both simple to make and absolutely irresistible.


Ingredients

  • 1 cup sugar
  • ½ cup butter
  • ¼ cup milk
  • 1 box lemon pudding (instant)
  • 2 cups quick oats
  • 1 tsp vanilla extract

Instructions

  • In a medium saucepan, combine the sugar, butter, and milk over medium heat. Stir constantly until the butter melts and the mixture starts to boil.
  • Once boiling, remove from heat and stir in the lemon pudding mix and vanilla extract.
  • Add in the quick oats and mix until well combined.
  • Let the mixture cool slightly, then roll into small balls (about 1 inch in diameter).
  • Place the oatmeal bites on a baking sheet lined with parchment paper and let them set at room temperature for 20-30 minutes, or until firm.
  • Serve and enjoy, or refrigerate to keep them fresh for longer.

Notes
