Description

These Zucchini Garlic Bites are crispy, flavorful, and packed with fresh ingredients. Perfect as a snack or appetizer, they’re sure to be a hit at any gathering!

Ingredients

Scale
  • 2 medium zucchinis, grated
  • 1 teaspoon salt
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 2 large eggs
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon dried oregano
  • Olive oil, for frying

Instructions

  • Prepare Zucchini: Place the grated zucchini in a colander, sprinkle with salt, and let it sit for about 10 minutes to draw out excess moisture. After 10 minutes, squeeze out as much liquid as possible using a clean kitchen towel or cheesecloth.
  • Mix Ingredients: In a large bowl, combine the squeezed zucchini, breadcrumbs, Parmesan cheese, minced garlic, eggs, parsley, and dried oregano. Mix well until everything is evenly incorporated.
  • Form Bites: Shape the mixture into small, bite-sized balls or patties.
  • Fry Bites: Heat a small amount of olive oil in a skillet over medium heat. Fry the zucchini bites in batches until golden brown and crispy on all sides, about 3-4 minutes per side.
  • Drain and Serve: Transfer the cooked bites to a paper-towel-lined plate to drain any excess oil. Serve warm.

Notes

  • For extra flavor, add red pepper flakes or your favorite herbs to the mixture.
  • These bites can be baked in the oven at 400°F (200°C) for a healthier option. Bake for about 20 minutes, flipping halfway through.
