These Zucchini Patties are a delicious and healthy way to enjoy zucchini! Crispy on the outside and soft on the inside, they make a great side dish or snack.


Ingredients

  • 2 medium zucchinis, grated
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 tablespoons olive oil

Instructions

  • In a large bowl, combine grated zucchinis, breadcrumbs, Parmesan cheese, egg, garlic, salt, and pepper.
  • Mix until all ingredients are well combined.
  • Form the mixture into small patties, about 2-3 inches in diameter.
  • Heat olive oil in a skillet over medium heat.
  • Cook the patties for 3-4 minutes on each side, or until golden brown and crispy.
  • Remove from the skillet and serve hot.

Notes

  • You can squeeze out any excess moisture from the zucchini using a clean kitchen towel to prevent the patties from becoming soggy.
  • Feel free to add herbs like basil or oregano for extra flavor.
