These Zucchini Patties are a delicious and healthy way to enjoy zucchini! Crispy on the outside and soft on the inside, they make a great side dish or snack.

- 2 medium zucchinis, grated
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 egg
- 2 cloves garlic, minced
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 2 tablespoons olive oil
Instructions
- In a large bowl, combine grated zucchinis, breadcrumbs, Parmesan cheese, egg, garlic, salt, and pepper.
- Mix until all ingredients are well combined.
- Form the mixture into small patties, about 2-3 inches in diameter.
- Heat olive oil in a skillet over medium heat.
- Cook the patties for 3-4 minutes on each side, or until golden brown and crispy.
- Remove from the skillet and serve hot.
Notes
- You can squeeze out any excess moisture from the zucchini using a clean kitchen towel to prevent the patties from becoming soggy.
- Feel free to add herbs like basil or oregano for extra flavor.
