Ingredients
For the fritters:
-
3 to 4 cups canola oil (for greasing or light frying, optional if baking in a greased pan)
-
3 cups diced Fuji apples, peeled, cored, and diced (about 3 large or 4 medium apples, approx 375 g)
-
2 teaspoons fresh lemon juice
-
1 ½ cups all-purpose flour, spooned and leveled (190 g)
-
⅓ cup granulated sugar (65 g)
-
1 ½ teaspoons baking powder
-
½ teaspoon salt
-
¾ teaspoon ground cinnamon
-
½ teaspoon ground nutmeg
-
½ cup whole milk (120 ml)
-
1 large egg, lightly beaten
-
3 tablespoons unsalted butter, melted and slightly cooled (45 g)
-
1 teaspoon pure vanilla extract
For the glaze:
-
2 cups confectioners sugar (240 g)
-
4 to 5 tablespoons milk or water (60 to 75 ml)
-
1 teaspoon pure vanilla extract
-
¼ teaspoon ground cinnamon
Instructions
-
Preheat oven to 350°F (175°C). Lightly grease a baking sheet or line with parchment paper.
-
Toss diced apples with lemon juice and set aside.
-
In a large bowl, whisk together flour, sugar, baking powder, salt, cinnamon, and nutmeg.
-
In another bowl, combine milk, egg, melted butter, and vanilla extract.
-
Pour wet ingredients into the dry ingredients and stir until just combined. Fold in the diced apples.
-
Drop batter by heaping spoonfuls onto the prepared baking sheet, spacing fritters about 2 inches apart.
-
Bake for 15–18 minutes or until fritters are golden brown and a toothpick inserted in the center comes out clean.
-
While fritters bake, prepare the glaze by whisking confectioners sugar, milk (or water), vanilla, and cinnamon until smooth. Adjust thickness by adding more liquid or sugar as needed.
- Drizzle glaze over warm fritters before serving.
Notes
-
Fuji apples work well for their sweetness and firmness but feel free to substitute with other apple varieties.
-
You can lightly fry fritters in canola oil for a traditional crispier texture if preferred.
- Store leftovers in an airtight container at room temperature for up to 2 days.
