Fresh Corn Salsa:

  • 2 cups fresh corn kernels

  • 1/4 cup chopped cilantro

  • 2 tablespoons minced red onion

  • 1 tablespoon lime juice

  • 1 teaspoon lime zest

  • 1 teaspoon olive oil

  • 1 teaspoon cilantro lime seasoning (JBJ Soul Seasoning brand)

  • 1/4 teaspoon kosher salt

Chicken:

  • 4 boneless skinless chicken breasts

  • 1 tablespoon cilantro lime seasoning (JBJ Soul Seasoning brand)

  • 1 tablespoon olive oil


Instructions

  • In a medium bowl, combine corn kernels, chopped cilantro, minced red onion, lime juice, lime zest, olive oil, cilantro lime seasoning, and kosher salt. Mix well and refrigerate to let flavors meld.

  • Pat the chicken breasts dry and rub them evenly with cilantro lime seasoning and olive oil.

  • Heat a grill or skillet over medium-high heat. Cook the chicken breasts for 5–7 minutes per side or until fully cooked and internal temperature reaches 165°F (74°C).

  • Remove chicken from heat and let rest for a few minutes before slicing.

  • Serve the chicken topped with the fresh corn salsa.

Notes

  • For extra flavor, marinate the chicken for 30 minutes to 1 hour before cooking.

  • Fresh corn can be replaced with frozen corn kernels if fresh is unavailable; thaw before use.
