Chicken:

Instructions

In a medium bowl, combine corn kernels, chopped cilantro, minced red onion, lime juice, lime zest, olive oil, cilantro lime seasoning, and kosher salt. Mix well and refrigerate to let flavors meld.

Pat the chicken breasts dry and rub them evenly with cilantro lime seasoning and olive oil.

Heat a grill or skillet over medium-high heat. Cook the chicken breasts for 5–7 minutes per side or until fully cooked and internal temperature reaches 165°F (74°C).
