- Shrimp – 1 cup, peeled and deveined
Rice
- Cooked rice – 3 cups, preferably day-old
Vegetables & Aromatics
- Garlic – 2 cloves, minced
- Onion – 1 small, chopped
- Carrots – 1/2 cup, diced
- Green peas – 1/2 cup
- Scallions – 2, chopped
Eggs
- Eggs – 2, beaten
Seasonings & Oils
- Soy sauce – 2 tablespoons
- Sesame oil – 1 teaspoon
- Salt – to taste
- Black pepper – to taste
Instructions
- Prepare the Ingredients: Peel and devein the shrimp, flake the crab meat gently. Chop garlic, onion, carrots, and scallions. Have all ingredients ready as stir-frying is a quick process.
- Cook the Eggs: Heat a bit of oil in a large pan or wok. Scramble the beaten eggs until fluffy and just set, then remove from the pan and set aside.
- Sauté Aromatics and Vegetables: Add more oil to the pan, then cook garlic and onion until fragrant and translucent. Add carrots and green peas, stir-frying until tender but still crisp.
- Cook Shrimp and Incorporate Crab: Add shrimp to the pan, stirring frequently until pink and cooked through. Gently fold in the crab meat, warming it without breaking it apart too much.
- Add Rice and Seasonings: Stir in the day-old rice, breaking up any clumps with your spatula. Pour soy sauce and drizzle sesame oil evenly over the mixture. Mix well to coat the rice, seafood, and vegetables.
- Finish with Eggs and Scallions: Return the cooked eggs to the pan, incorporating them gently into the fried rice. Toss in chopped scallions and season with salt and pepper to taste. Stir everything together until heated through.
Notes
- Use day-old rice to keep grains separate and prevent mushiness.
- Cook on high heat for quick cooking and enhanced flavor.
- Prepare all ingredients ahead of time for a smooth stir-fry process.
- Fold crab meat gently to maintain its texture.
- Adjust seasoning gradually, tasting as you go to achieve the perfect balance.
