Description

Creamy Chipotle Shrimp is a quick and flavorful dish combining tender shrimp with a smooth, smoky chipotle cream sauce. Perfect for busy weeknights or entertaining, this recipe delivers a vibrant balance of heat and creaminess that can be enjoyed as a main course, taco filling, or salad topping.

Ingredients

Scale

Main Ingredients

  • 1 lb medium or large raw shrimp, peeled and deveined
  • 23 chipotle peppers in adobo sauce, chopped
  • 2 ounces cream cheese
  • 2 cloves garlic, minced
  • 1 small onion, finely chopped
  • 2 tablespoons fresh cilantro, chopped
  • 1 tablespoon lime juice
  • 12 tablespoons olive oil or butter
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Prepare the Ingredients: Peel and devein shrimp if not already done. Mince the garlic, finely chop the onion and cilantro, and open the can of chipotle peppers in adobo sauce.
  2. Sauté Aromatics: Heat olive oil or butter in a skillet over medium heat. Add the onions and garlic, sauté until translucent and fragrant to build the flavor base.
  3. Cook the Shrimp: Increase heat to medium-high and add shrimp to the skillet. Cook until shrimp turn pink, about 2 minutes per side. Remove shrimp and set aside to avoid overcooking.
  4. Make the Chipotle Cream Sauce: Reduce heat to medium. Add chopped chipotle peppers and a splash of their adobo sauce to the skillet. Stir in cream cheese until melted and smooth. Add lime juice, salt, and pepper to taste.
  5. Combine and Finish: Return the cooked shrimp to the sauce, toss gently to coat evenly, and heat through for 1-2 minutes. Sprinkle chopped cilantro on top before serving.

Notes

  • Use fresh or properly thawed shrimp for best texture.
  • Do not overcook shrimp to avoid rubbery texture; remove as soon as they turn pink.
  • If sauce is too thick, add a splash of water or broth to adjust consistency.
  • Taste and adjust chipotle heat gradually to your preference.
  • Add lime juice gradually for balanced brightness in flavor.
