Ingredients
Scale
Pasta
- 8 oz fettuccine or spaghetti
Mushrooms
- 2 cups mixed cremini and shiitake mushrooms, sliced
Sauce
- 2 tbsp miso paste (white or red)
- 1/2 cup heavy cream or full-fat coconut milk
- 1/4 cup warm water (to dissolve miso)
Aromatics & Fats
- 2 cloves garlic, finely chopped
- 1 small onion, finely chopped
- 2 tbsp olive oil or butter
Finishing Touches
- 1/4 cup grated Parmesan cheese (optional)
- 2 tbsp fresh parsley or chives, chopped
Instructions
- Cook the Pasta: Boil salted water in a large pot and cook the pasta until al dente, following package instructions. Drain the pasta, reserving 1 cup of pasta water for later use.
- Sauté the Aromatics and Mushrooms: Heat olive oil or butter in a large skillet over medium heat. Add the finely chopped garlic and onion, cooking until soft and fragrant. Add the sliced mushrooms and sauté until they are golden brown and their moisture has mostly released.
- Prepare the Miso Cream Sauce: Lower the heat and whisk the miso paste into warm water until fully dissolved. Stir this miso mixture into the skillet along with the heavy cream or coconut milk, combining until the sauce is smooth and creamy.
- Combine Pasta and Sauce: Add the drained pasta to the sauce and toss gently to coat every strand. If the sauce is too thick, gradually add reserved pasta water to loosen it to your desired consistency.
- Finish with Fresh Herbs and Cheese: Turn off the heat and sprinkle grated Parmesan cheese (if using) and freshly chopped herbs into the pasta. Toss gently so the cheese melts slightly and the flavors meld together.
Notes
- Use good quality miso paste (white for mildness, red for deeper umami).
- Do not overcook mushrooms; sauté until golden for best texture and flavor.
- Reserve pasta water to help adjust sauce consistency naturally.
- Be cautious with additional salt as miso paste is already salty.
- Fresh herbs brighten the dish and add a fresh contrast.
