Description

This Easy Chicken Alfredo Casserole is the ultimate comfort food, combining tender shredded chicken, creamy Alfredo sauce, and pasta in a cheesy, baked casserole. Perfect for busy weeknights, this dish is quick to make and sure to please everyone at the dinner table. Optional peas add a pop of color and flavor!

Ingredients

Scale
  • 2 cups cooked chicken, shredded or diced
  • 3 cups cooked pasta (penne, fusilli, or rigatoni work well)
  • 2 cups Alfredo sauce (store-bought or homemade)
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 cup frozen peas (optional)
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  • Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking dish with a little olive oil or cooking spray.

  • Prepare the Garlic: In a skillet, heat olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.

  • Combine the Ingredients: In a large bowl, mix together the cooked chicken, cooked pasta, Alfredo sauce, sautéed garlic, mozzarella cheese, Parmesan cheese, and frozen peas (if using). Season with salt and pepper to taste.

  • Assemble the Casserole: Pour the mixture into the prepared baking dish and spread it out evenly.

  • Bake: Sprinkle extra mozzarella or Parmesan cheese on top (optional). Bake in the preheated oven for 20-25 minutes or until the casserole is hot and the cheese is melted and bubbly.

  • Serve: Garnish with chopped fresh parsley before serving.

Notes

  • You can use leftover rotisserie chicken for an even quicker meal.
  • For a lighter version, you can use a reduced-fat Alfredo sauce or swap the cheese for a lighter option.
  • Add any of your favorite vegetables, like spinach or mushrooms, for extra flavor.
