Description

This Easy Corn Casserole is a classic comfort side dish that’s creamy, buttery, and loaded with corn flavor. With just five simple ingredients and minimal prep, it bakes into a golden, slightly sweet, and savory casserole that pairs perfectly with any holiday spread or weeknight dinner.

Ingredients

Scale
  • 1 box Jiffy Corn Muffin Mix (8 ounces, dry mix only)

  • 15 ounces whole kernel corn, drained

  • 15 ounces creamed corn, not drained

  • 1 cup sour cream

  • 1/2 cup melted butter

Instructions

  • Preheat oven to 350°F (175°C). Grease a 9×9-inch or similar-sized baking dish.

  • In a large mixing bowl, combine corn muffin mix, whole kernel corn, creamed corn, sour cream, and melted butter. Stir until fully mixed.

  • Pour the mixture into the prepared baking dish and spread evenly.

  • Bake for 45–50 minutes, or until the top is golden brown and the center is set.

  • Let cool slightly before serving.

Notes

  • For a cheesy twist, add 1 cup of shredded cheddar before baking.

  • Can be made ahead and reheated—perfect for holidays and potlucks.

  • Use a toothpick to test doneness; it should come out clean when inserted in the center.
