- ¾ cup mashed ripe banana (about 2 small bananas)
- 2 tablespoons melted unsalted butter (plus more for greasing the griddle)
- 1 large egg
- ¾ cup buttermilk
- ¼ cup packed brown sugar (preferably dark brown)
- 1 teaspoon pure vanilla extract
Instructions
- In a large bowl, whisk together the flour, baking powder, and salt.
- In a separate bowl, combine the mashed bananas, melted butter, egg, buttermilk, brown sugar, and vanilla extract. Mix until smooth.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; the batter should be slightly lumpy.
- Heat a griddle or skillet over medium heat and lightly grease with butter.
- For each pancake, pour about ¼ cup of batter onto the griddle. Cook for about 2-3 minutes, or until bubbles form on the surface, then flip and cook for an additional 1-2 minutes on the other side, until golden brown.
- Repeat with the remaining batter, greasing the griddle as necessary.
- Serve warm with your favorite toppings, such as maple syrup, additional banana slices, or whipped cream.
Notes
- For extra banana flavor, add a few banana slices into the batter before cooking.
- These pancakes are delicious served with toasted nuts, such as walnuts or pecans, for added crunch.
- If you don’t have buttermilk, you can substitute it with regular milk mixed with a teaspoon of lemon juice or vinegar.
