  • ¾ cup buttermilk

Instructions

  • In a large bowl, whisk together the flour, baking powder, and salt.
  • In a separate bowl, combine the mashed bananas, melted butter, egg, buttermilk, brown sugar, and vanilla extract. Mix until smooth.
  • Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; the batter should be slightly lumpy.
  • Heat a griddle or skillet over medium heat and lightly grease with butter.
  • For each pancake, pour about ¼ cup of batter onto the griddle. Cook for about 2-3 minutes, or until bubbles form on the surface, then flip and cook for an additional 1-2 minutes on the other side, until golden brown.
  • Repeat with the remaining batter, greasing the griddle as necessary.
