For the Chicken:

  • 4 boneless, skinless chicken breasts

  • 1 cup all-purpose flour

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • 1 teaspoon salt

  • 1/2 teaspoon black pepper

  • 2 large eggs (lightly beaten)

  • 1 cup breadcrumbs (panko or regular)

  • 3 tablespoons unsalted butter

  • 3 tablespoons olive oil

For the Sauce:

  • 4 tablespoons unsalted butter

  • 3 garlic cloves, minced

  • 1/2 cup chicken broth

  • 1 tablespoon lemon juice

  • 2 tablespoons heavy cream

  • 1 tablespoon parsley, chopped (for garnish)


Instructions

  • Prepare the Chicken:

    • In a shallow dish, combine the flour, garlic powder, onion powder, salt, and black pepper.

    • In a separate shallow dish, beat the eggs lightly.

    • In a third shallow dish, place the breadcrumbs.

    • Dredge each chicken breast first in the seasoned flour, then dip it into the beaten eggs, and finally coat it with breadcrumbs, pressing lightly to ensure the coating sticks.

  • Cook the Chicken:

    • In a large skillet, heat the olive oil and butter over medium heat until hot.

    • Add the breaded chicken breasts to the pan and cook for 4-5 minutes on each side, or until golden brown and cooked through. The internal temperature should reach 165°F (74°C).

    • Remove the chicken from the pan and set it aside on a plate.

  • Make the Sauce:

    • In the same skillet, melt the butter over medium heat.

    • Add the minced garlic and cook for 1-2 minutes until fragrant, being careful not to burn it.

    • Pour in the chicken broth, scraping up any bits stuck to the pan, and bring it to a simmer for 3-4 minutes.

    • Stir in the lemon juice and heavy cream, and let the sauce simmer for another 2-3 minutes until it thickens slightly.

 

  • Assemble and Serve:

    • Return the chicken breasts to the skillet, spooning some of the sauce over each piece. Let it simmer for a minute to allow the chicken to absorb some of the sauce.

    • Garnish with chopped parsley.

    • Serve the chicken with extra sauce on the side.

Notes

  • For added flavor, you can sprinkle grated Parmesan cheese over the chicken right before serving.

  • You can substitute the heavy cream with half-and-half for a lighter version, but it will affect the sauce’s richness.
