Ingredients
For the Chicken:
-
4 boneless, skinless chicken breasts
-
1 cup all-purpose flour
-
1 teaspoon garlic powder
-
1 teaspoon onion powder
-
1 teaspoon salt
-
1/2 teaspoon black pepper
-
2 large eggs (lightly beaten)
-
1 cup breadcrumbs (panko or regular)
-
3 tablespoons unsalted butter
-
3 tablespoons olive oil
For the Sauce:
-
4 tablespoons unsalted butter
-
3 garlic cloves, minced
-
1/2 cup chicken broth
-
1 tablespoon lemon juice
-
2 tablespoons heavy cream
-
1 tablespoon parsley, chopped (for garnish)
Instructions
-
Prepare the Chicken:
-
In a shallow dish, combine the flour, garlic powder, onion powder, salt, and black pepper.
-
In a separate shallow dish, beat the eggs lightly.
-
In a third shallow dish, place the breadcrumbs.
-
Dredge each chicken breast first in the seasoned flour, then dip it into the beaten eggs, and finally coat it with breadcrumbs, pressing lightly to ensure the coating sticks.
-
-
Cook the Chicken:
-
In a large skillet, heat the olive oil and butter over medium heat until hot.
-
Add the breaded chicken breasts to the pan and cook for 4-5 minutes on each side, or until golden brown and cooked through. The internal temperature should reach 165°F (74°C).
-
Remove the chicken from the pan and set it aside on a plate.
-
-
Make the Sauce:
-
In the same skillet, melt the butter over medium heat.
-
Add the minced garlic and cook for 1-2 minutes until fragrant, being careful not to burn it.
-
Pour in the chicken broth, scraping up any bits stuck to the pan, and bring it to a simmer for 3-4 minutes.
-
Stir in the lemon juice and heavy cream, and let the sauce simmer for another 2-3 minutes until it thickens slightly.
-
-
Assemble and Serve:
-
Return the chicken breasts to the skillet, spooning some of the sauce over each piece. Let it simmer for a minute to allow the chicken to absorb some of the sauce.
-
Garnish with chopped parsley.
-
Serve the chicken with extra sauce on the side.
-
Notes
-
For added flavor, you can sprinkle grated Parmesan cheese over the chicken right before serving.
-
You can substitute the heavy cream with half-and-half for a lighter version, but it will affect the sauce’s richness.
- Serve this dish with mashed potatoes, steamed vegetables, or a simple salad.
