  • 1 lb lean ground beef (90% lean)
  • 1 small onion, diced
  • 1 small bell pepper, diced (optional)
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 2 cups low-sodium beef broth
  • 1 cup low-fat milk
  • 2 cups whole wheat or gluten-free pasta (elbow macaroni or similar)
  • 1 tablespoon ketchup
  • 1 tablespoon yellow mustard
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon paprika
  • Salt and pepper, to taste
  • 1 1/2 cups reduced-fat shredded cheddar cheese

Instructions

  • Cook the Beef:
    In a large skillet, cook the ground beef over medium heat until browned, breaking it up with a spoon as it cooks. Drain any excess fat.
  • Add Vegetables:
    Add the diced onion, bell pepper (if using), and garlic to the skillet. Cook until the vegetables are softened, about 3-4 minutes.
  • Combine with Liquid Ingredients:
    Stir in the diced tomatoes with their juices, beef broth, milk, ketchup, mustard, Worcestershire sauce, paprika, salt, and pepper. Bring the mixture to a simmer.
  • Add Pasta:
    Stir in the pasta, making sure it is submerged in the liquid. Cover the skillet and cook, stirring occasionally, for 10-12 minutes, or until the pasta is cooked through and the liquid has reduced.
  • Add Cheese:
    Once the pasta is cooked, remove the skillet from the heat. Stir in the shredded cheddar cheese until it is melted and evenly distributed.
  • Serve:
    Serve the cheeseburger pasta hot, with a side salad for a complete meal.

Notes

  • You can add more vegetables, such as diced zucchini or spinach, to increase the nutrient content.
