- 1 small onion, diced
- 1 small bell pepper, diced (optional)
- 2 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes, undrained
- 2 cups low-sodium beef broth
- 1 cup low-fat milk
- 2 cups whole wheat or gluten-free pasta (elbow macaroni or similar)
- 1 tablespoon ketchup
- 1 tablespoon yellow mustard
- 1 teaspoon Worcestershire sauce
- 1/2 teaspoon paprika
- Salt and pepper, to taste
- 1 1/2 cups reduced-fat shredded cheddar cheese
Instructions
- Cook the Beef:
In a large skillet, cook the ground beef over medium heat until browned, breaking it up with a spoon as it cooks. Drain any excess fat. - Add Vegetables:
Add the diced onion, bell pepper (if using), and garlic to the skillet. Cook until the vegetables are softened, about 3-4 minutes. - Combine with Liquid Ingredients:
Stir in the diced tomatoes with their juices, beef broth, milk, ketchup, mustard, Worcestershire sauce, paprika, salt, and pepper. Bring the mixture to a simmer. - Add Pasta:
Stir in the pasta, making sure it is submerged in the liquid. Cover the skillet and cook, stirring occasionally, for 10-12 minutes, or until the pasta is cooked through and the liquid has reduced. - Add Cheese:
Once the pasta is cooked, remove the skillet from the heat. Stir in the shredded cheddar cheese until it is melted and evenly distributed. - Serve:
