4 oz semi-sweet chocolate baking bars (4 bars), chopped
Instructions

In a large mixing bowl, combine chopped pecans, graham cracker crumbs, brown sugar, and salt.

Add the melted butter, maple syrup, corn syrup, and rum extract to the dry ingredients. Mix until fully combined and sticky.

Chill the mixture in the refrigerator for about 30 minutes, or until firm enough to roll.

Scoop and roll into small balls, about 1 inch in diameter.

Place the formed balls on a parchment-lined tray and freeze for 20–30 minutes.

While the balls are chilling, melt the chopped semi-sweet chocolate in a microwave-safe bowl in 30-second intervals, stirring until smooth.

Dip each ball into the melted chocolate using a fork or toothpick, then return to the tray.

Let the chocolate set at room temperature or refrigerate until firm.
