  • 2 cups shredded green or Napa cabbage
  • 1 medium carrot, julienned or grated
  • 2 green onions, thinly sliced
  • 2 tbsp rice vinegar
  • 1 tsp sugar or honey
  • Pinch of salt

Noodles

  • 6 oz rice noodles
  • 1 tbsp sesame oil (for tossing noodles)

Seasonings & Garnishes

  • 1 tbsp soy sauce
  • 1 tbsp sesame oil (additional, for drizzling)
  • Optional garnishes: toasted sesame seeds, chopped peanuts, fresh cilantro or Thai basil

Instructions

  1. Prepare the Noodles: Cook rice noodles according to package instructions by soaking in hot water until tender. Drain well and toss with a tablespoon of sesame oil to prevent sticking and add a subtle nutty flavor.
  2. Make the Cabbage Slaw: In a bowl, combine shredded cabbage, julienned carrots, and sliced green onions. In a separate small bowl, whisk together rice vinegar, sugar or honey, and a pinch of salt. Pour the dressing over the vegetables and toss to coat well. Set aside to let flavors meld.
  3. Cook the Pork: Heat a skillet over medium-high heat. Season the thinly sliced pork lightly with salt and pepper. Stir-fry pork until cooked through and slightly caramelized, about 4-5 minutes. Remove from heat and keep warm.
  4. Pan-Fry Potstickers: In the same skillet, add a little oil and arrange potstickers in a single layer. Cook over medium heat until the bottoms are golden brown and crispy, about 3-4 minutes. Add 1 tablespoon water to the pan, cover, and steam for an additional 3-4 minutes until fully cooked through.
  5. Assemble the Bowl: Start with a bed of the prepared rice noodles, then layer on the cabbage slaw. Top with cooked pork slices and crispy potstickers. Garnish with additional green onions, toasted sesame seeds, chopped peanuts, or fresh herbs as desired.
