Description

Ingredients

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1/4 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup buttermilk
  • 1/2 cup melted butter
  • 1/4 cup honey
  • 2 eggs

Instructions

  • Preheat oven to 400°F (200°C) and grease a mini muffin tin.
  • In a large bowl, mix together the cornmeal, flour, sugar, baking powder, and salt.
  • In a separate bowl, whisk together the buttermilk, melted butter, honey, and eggs until smooth.
  • Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
  • Spoon the batter into the mini muffin tin, filling each cup about 3/4 full.
  • Bake for 12-15 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
