- 1 cup cornmeal
- 1 cup all-purpose flour
- 1/4 cup sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup buttermilk
- 1/2 cup melted butter
- 1/4 cup honey
- 2 eggs
Instructions
- Preheat oven to 400°F (200°C) and grease a mini muffin tin.
- In a large bowl, mix together the cornmeal, flour, sugar, baking powder, and salt.
- In a separate bowl, whisk together the buttermilk, melted butter, honey, and eggs until smooth.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
- Spoon the batter into the mini muffin tin, filling each cup about 3/4 full.
- Bake for 12-15 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
- Let the cornbread poppers cool slightly before serving.
Notes
- For a bit of extra flavor, you can add a pinch of cayenne pepper or finely chopped jalapeños to the batter.
