  • 1 ¼ cup (137g) powdered sugar

  • 1 egg

  • 1 teaspoon baking powder

  • ½ teaspoon salt

For the Lemon Glaze:

  • 2 tablespoons salted butter

  • ½ tablespoon vegetable shortening (optional, helps glaze crust and harden)

  • ¾ cup powdered sugar

  • Juice of ½ lemon


Instructions

  • Preheat Oven:
    Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.

  • Make Cookie Dough:
    In a large bowl, cream together the softened butter and powdered sugar until light and fluffy. Beat in the egg, lemon oil, and lemon zest until combined.

  • Add Dry Ingredients:
    In a separate bowl, whisk together cake flour, baking powder, and salt. Gradually add dry ingredients to the wet mixture, mixing until just combined.

  • Shape Cookies:
    Roll dough into 1-inch balls and place them about 2 inches apart on the prepared baking sheets. Flatten slightly with the palm of your hand.

  • Bake:
    Bake for 10-12 minutes or until edges are lightly golden. Remove from oven and let cool on baking sheets for 5 minutes before transferring to wire racks to cool completely.

  • Prepare Lemon Glaze:
    In a small saucepan, melt butter and vegetable shortening (if using) over low heat. Remove from heat and whisk in powdered sugar and lemon juice until smooth.

  • Glaze Cookies:
    Dip the tops of the cooled cookies into the lemon glaze or drizzle it over the cookies. Let the glaze set and harden before serving.
