Ingredients
For the Cookies:

1 ¼ cup (137g) powdered sugar

For the Lemon Glaze:

2 tablespoons salted butter

½ tablespoon vegetable shortening (optional, helps glaze crust and harden)

¾ cup powdered sugar

Juice of ½ lemon
Instructions

Preheat Oven:
Preheat oven to 350°F (175°C). Line baking sheets with parchment paper. -
Make Cookie Dough:
In a large bowl, cream together the softened butter and powdered sugar until light and fluffy. Beat in the egg, lemon oil, and lemon zest until combined. -
Add Dry Ingredients:
In a separate bowl, whisk together cake flour, baking powder, and salt. Gradually add dry ingredients to the wet mixture, mixing until just combined. -
Shape Cookies:
Roll dough into 1-inch balls and place them about 2 inches apart on the prepared baking sheets. Flatten slightly with the palm of your hand. -
Bake:
Bake for 10-12 minutes or until edges are lightly golden. Remove from oven and let cool on baking sheets for 5 minutes before transferring to wire racks to cool completely. -
Prepare Lemon Glaze:
In a small saucepan, melt butter and vegetable shortening (if using) over low heat. Remove from heat and whisk in powdered sugar and lemon juice until smooth. - Glaze Cookies:
Dip the tops of the cooled cookies into the lemon glaze or drizzle it over the cookies. Let the glaze set and harden before serving.
